2/3 CUP HONEY
6 SPRIGS ROSEMARY
Combine the liquid honey and rosemary in a small pot and gently heat over medium-low until honey starts to bubble. After 5 minutes remove from the heat and leave to cool for about 5-10 minutes. Meanwhile, fill glasses half full with crushed ice and using a strainer, juice your grapefruit (by squeezing or using a reamer) and set aside juice. Remove springs of Rosemary from honey once cooled and add honey to the grapefruit juice and using a shaker (or jar with tight-fitting lid, shake vigorously until combined. Divide the mixture between glasses and garnish with a sprig of rosemary, or other fresh herb and grapefruit wedges.
*To make this a specialty cocktail, add 1 ounce vodka or gin
